My husband has been needing a quick breakfast — and instead of eating my son’s snack of gluten-free Rice Chex as cereal, I decided I needed make something healthier and more cost effective.

My sweet friend, Rachel, gave me her recipe.  She makes this in a double batch once a month.  I only tackled a single batch, but we still had over 16 cups of granola!

Nuts don’t get along well with my husband, so I made half of it without the nuts.
